How to Make Sheet Pan Quesadillas

Preheat oven to 425° F / 220° C.
Heat olive oil in a large skillet over medium heat. Add onion and peppers, cook until tender for about 5 minutes. Remove from the pan and set aside in a small bowl.
In the same pan, add the ground beef and cook, breaking up the meat, until brown for about 5 minutes. Be sure to drain the fat.
Stir in paprika, chili powder, cumin, and season with salt and pepper to taste.
Place 6 tortillas on a baking sheet, be sure to overlap the tortillas, and place another to completely cover the baking sheet.
Top with ground beef, then add the pepper and onion mixture.
Add the grated cheese and green onions on top.
