Whipped these up for game night and they vanished so fast! Barely could eat one!

2 cups finely diced cauliflower
1 tablespoon finely chopped onion
1/2 cup shredded pepper jack cheese
1/2 cup grated Parmesan cheese
1 egg
Salt and pepper to taste
Instructions:
1. Process raw cauliflower until crumb-like in a food processor.
2. Place cauliflower in a colander lined with paper towels, gently pressing to remove excess moisture.
3. Mix chopped onion and cheeses. Season with salt and pepper, and add an egg. Let sit for at least 15 minutes or so.
4. Preheat frying oil to 360°F (182°C).
5. Shape the mixture into cylinders, blunt the ends for tater tot shape.
6. Fry in preheated oil until golden.
7. Drain on paper towels, season with more salt, and serve. Enjoy!
