Ingredients:

1 pound lean ground beef or turkey

1 chopped onion

2 minced garlic cloves

1 can (15-ounce) black beans, drained and rinsed

1 can (15-ounce) corn, drained

1 can (15-ounce) diced tomatoes, with juice

1 can (4-ounce) diced green chiles

1 can (10-ounce) red enchilada sauce

2 tablespoons taco seasoning

3 cups crushed tortilla chips

2 cups shredded Mexican cheese blend

Fresh cilantro, for garnish

Optional toppings: sour cream, diced avocado

Directions:

Brown the ground meat with onion and garlic in a skillet. Drain any excess grease.
