This casserole is so packed with flavor, we haven't been able to stop eating it!

1.5 pounds fresh green beans, trimmed and halves (or use 2 cans green beans, rinsed and drained)
1 cup sour cream
1/4 white chopped onion
10 ounces grated mozzarella cheese
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon garlic powder
Salt and pepper to taste
Optional: Can garnish with crispy fried onions on top
Instructions:
1. Preheat your oven to 400ºF and prepare a bowl of ice water nearby.
2. Boil salted water in a large pot and cook the green beans for 4-6 minutes until they turn bright green and tender-crisp. Next, cool them in the ice bath, drain, and place them in a greased baking dish.
3. Melt butter in a skillet. Sauté onion until soft. Stir in flour and garlic powder. Season with salt and pepper, and add sour cream. Simmer briefly.
4. Pour the sour cream mixture over the green beans, top with grated mozzarella.
5. Bake in preheated oven for around 20 minutes or until the cheese is melted and bubbly.
Let it cool for 5 minutes before serving. Enjoy!
