Ingredients
- 2 large sweet onions, such as Vidalia or Walla Walla
- 1 cup all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup buttermilk
- 2 eggs
- 2 cups panko breadcrumbs
- Cooking spray (preferably olive oil-based)
Directions
1. Begin by peeling the onions and slicing them into 1/4-inch thick rounds. Carefully separate the slices into rings, discarding the smallest rounds or saving them for another use.
2. In a shallow dish, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper.
3. In a separate dish, beat the buttermilk and eggs until well combined.
4. Place the panko breadcrumbs into a third dish.
5. Take each onion ring and dredge it first in the flour mixture, then dip it into the buttermilk-egg blend, and finally coat it generously with the panko breadcrumbs. Press the breadcrumbs onto the ring to ensure they adhere well.
6. Arrange the breaded onion rings in a single layer in the air fryer basket. You might need to cook them in batches to avoid overcrowding, which can lead to uneven cooking.
7. Lightly spray the onion rings with cooking spray. This will help them achieve that desirable golden brown finish.
