Instructions:
1. Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
2. Cut each chicken breast into 4 equal-sized pieces. Pound each piece of chicken until it's about 1/4 inch thick.
3. In a bowl, mix together the softened cream cheese, chopped green onions, and shredded Pepperjack cheese.
4. Place 1/4 of the cheese mixture into the middle of each piece of chicken.
5. Starting at the long side, roll up each chicken breast, keeping the cheese mixture in the middle.
6. Wrap 1 to 2 slices of bacon around each chicken breast, securing with toothpicks if needed. One slice of bacon is sufficient for wrapping, but using 2 slices fully wraps the chicken and adds extra flavor.
7. Place the bacon-wrapped chicken breasts on the prepared baking sheet.
8. Bake in the preheated oven for 30 minutes, until the chicken is cooked through and the bacon is crispy.
9. After baking, broil the topside of the chicken breasts for about 5 minutes to fully brown and crisp the bacon. Then, carefully turn each breast over and broil for an additional 3 minutes to crisp up the bottom side.
10. Once done, remove the toothpicks and serve hot. Enjoy the delicious combination of creamy cheese, tender chicken, and crispy bacon!
