Ingredients
For the Crullers:
1 cup water
6 tablespoons unsalted butter
1 tablespoon granulated sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs
1 teaspoon vanilla extract
Vegetable oil (for frying)
For the Strawberry Glaze:
1 cup fresh strawberries, finely mashed or pureed
2 cups powdered sugar
1 tablespoon heavy cream (optional, for consistency)
Directions
Step 1: Prepare the Pâte à Choux Dough
In a medium saucepan, combine water, butter, sugar, and salt. Heat over medium heat until the butter melts and the mixture begins to simmer.
Add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan.
Remove from heat and allow the dough to cool for 5 minutes.
Add the eggs one at a time, beating well after each addition, until the dough is smooth and glossy. Stir in the vanilla extract.
Step 2: Shape the Crullers
Transfer the dough to a piping bag fitted with a large star tip.
Pipe 3-4 inch rings onto squares of parchment paper. Chill the piped dough for about 20 minutes to firm up.
Step 3: Fry the Crullers
Heat vegetable oil in a deep pot to 350°F (175°C).
Carefully place the dough (parchment side up) into the hot oil. Remove the parchment after a few seconds.
