Chicken Cannelloni

Ingredients to prepare chicken cannelloni
8 sheets for cooked cannelloni
1 cooked and shredded chicken breast
1 onion cut into small squares
2 cloves of garlic, cut very small
1 red pepper cut into small squares
70 ml. crushed tomato
Bechamel sauce (I leave you my recipe in the tips section below)
Parmesan cheese
Salt and pepper to taste
Olive oil

Step 1: We start by preparing the filling for our chicken cannelloni, to do this, in a saucepan over medium heat, add the oil until hot, then add the onion, garlic and cook for two minutes, then add the red pepper and cook for 4 minutes, add the crushed tomato and cook for another 5 minutes.
Step 2: Add the cooked chicken and stir, then add the white wine and let the alcohol evaporate (about 2 minutes), salt and pepper to taste and continue cooking for another 5 minutes.
Step 3: We take a plate for the cannelloni and at one end we add 2-3 tablespoons of chicken stuffing and roll until closed, we repeat the process with all the plates of cannelloni.
Step 4: In a baking dish, add a little béchamel sauce and arrange all our cannelloni, add the béchamel sauce again on top, add the parmesan and put in the oven to gratin, when we see that they are golden on top, we already have our chicken cannelloni ready, take out of the oven, let it rest for a few minutes and serve! take advantage!!
