In a large bowl, mix the flour, sugar, baking powder, and salt.
Add the cold butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
Add the egg yolk, sour cream (or Greek yogurt), and vanilla. Knead gently until a smooth dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
2️⃣ Make the filling:
In a small bowl, mix the chopped dried fruits, brown sugar, cinnamon, and melted butter. If using honey or jam, mix it in as well.
3️⃣ Roll and fill:
Preheat the oven to 180°C (350°F).
On a lightly floured surface, roll out the dough into a thin rectangle (about 3 mm / ⅛ inch thick).
Spread the filling evenly over the dough.
4️⃣ Shape the pastries:
For strudels: Roll the dough into a log and slice into pieces.
For rugelach: Cut the dough into triangles (like a pizza) and roll each piece from the wide end to form crescent shapes.
5️⃣ Bake:
Place the rolls on a lined baking sheet.
Brush with a beaten egg for a golden finish.
Bake for 20-25 minutes, until golden and flaky.
6️⃣ Serve & enjoy:
Let them cool slightly, then dust with powdered sugar.
