Ingredients:
4 eggs
100 g sugar
1 pinch of salt
1 packet of vanilla sugar
250 ml milk
200 g flour
50 g raisins
2 tbsp butter
Icing sugar for dusting
Apple sauce or plum compote for serving

Step 1: Prepare the dough
First, separate the eggs into yolks and egg whites. Beat the egg whites with a pinch of salt until stiff. Mix the egg yolks in a bowl with sugar, vanilla sugar and milk. Gradually add the flour and stir everything into a smooth dough. Fold in the raisins.
Step 2: Bake the Kaiserschmarren
Now carefully fold the stiffly beaten egg whites into the dough until a homogeneous mass is formed. Heat the butter in a large pan. Pour in the batter and bake over medium heat for about 5 to 7 minutes until the bottom is golden brown. Use two forks to tear the batter into pieces and turn the pieces over. Bake for another 5 minutes until the other side is golden brown.
Step 3: Serve
Arrange the Kaiserschmarren on plates, dust with powdered sugar and serve warm. Serve with apple sauce or plum compote.
