SautΓ© onions:
In a saucepan, heat the olive oil and sautΓ© the finely chopped onion over medium heat until translucent (about 3-4 minutes).
Add garlic and rice:
Add the chopped garlic and sautΓ© for 30 seconds until fragrant. Stir in the rice and lightly toast for 1-2 minutes.
Add liquid and spices:
Add the stock (or water), lemon juice, lemon zest, oregano, salt and pepper to the pot. Stir well.
Cook rice:
Bring the rice to a boil, then reduce the heat and simmer covered for about 15-18 minutes until the liquid is absorbed.
Let it rest and fluff up:
Remove the pot from the heat and let the rice rest for 5 minutes. Then fluff it up with a fork.
Serve:
Garnish with fresh parsley and enjoy warm!
Tip:
This lemon rice goes great with grilled meat, fish or Mediterranean vegetable dishes. πΏππ
