This crispy pork and potato casserole is a delightful fusion of comfort and flavor, perfect for those chilly Midwest evenings. Drawing inspiration from traditional European casseroles, this dish combines the savory richness of pork with the earthy goodness of potatoes. It's a hearty meal that brings warmth and satisfaction, making it an ideal choice for family gatherings or a cozy night in.
This casserole pairs beautifully with a crisp green salad dressed in a tangy vinaigrette, which helps cut through the richness of the dish. Ingredients
1.5 pounds of pork shoulder, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
4 medium potatoes, thinly sliced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
2 tablespoons butter, melted
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium-high heat. Add the pork cubes and sear until browned on all sides. Remove from the skillet and set aside.
In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent.
Layer half of the sliced potatoes in a greased 9x13 inch baking dish. Season with salt, pepper, and half of the dried thyme.
Spread the sautéed onions and garlic over the potatoes, followed by the seared pork cubes.
Layer the remaining potatoes on top, seasoning again with salt, pepper, and the rest of the thyme.
In a bowl, mix the chicken broth and heavy cream. Pour this mixture over the layered ingredients in the baking dish.
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese and breadcrumbs over the top, and drizzle with melted butter.
Return to the oven and bake uncovered for an additional 15-20 minutes, or until the top is golden brown and crispy.
Allow the casserole to cool for a few minutes before serving.

For a lighter version, you can substitute the heavy cream with half-and-half or milk. If you prefer a spicier kick, add a teaspoon of smoked paprika or cayenne pepper to the seasoning. For a different flavor profile, try swapping the cheddar cheese with Gruyère or Swiss cheese. Vegetarians can replace the pork with mushrooms or a mix of root vegetables, and use vegetable broth instead of chicken broth.
