Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
Divide dough into 8 equal pieces.
Roll each piece into a ~20-inch rope. Flatten it slightly.
Place mozzarella along the center, then pinch edges over to seal the cheese in (like a filled rope).
Carefully shape into pretzel form (you can twist or even just make them into knots if that’s easier).
Baking Soda Bath:
In a large pot, bring 9 cups of water + baking soda to a boil.
Drop pretzels one at a time into the bath for 20-30 seconds.
