My Jewish neighbor brought me this as a gift, and I couldn't help but eat it.

Ingredients
6 cups finely sliced and chopped apples (approximately 6 to 8 medium apples)
2 tablespoons of ground cinnamon
2 1/2 cups granulated sugar, divided
3 cups all-purpose flour
1 tablespoon of chemical yeast
1/2 teaspoon of salt
1 cup vegetable oil
4 large eggs
1/4 cup orange juice
2 1/2 teaspoons vanilla extract
Directorates
Preheat your oven to 350oF (175oC). Grease and flour a Bundt cake mold and set it aside.
In a large bowl, mix the apple slices with the ground cinnamon and 1/2 cup of sugar. Reserve this mixture to let the flavors mix.
