Dissolve the dried yeast and honey in warm water and let it rest for 5 minutes until it foams slightly.
Combine the spelt flour and salt in a large bowl. Add the yeast water and olive oil and knead into a smooth dough.
Cover the dough and let it rise in a warm place for about 1 hour, until it has doubled in size.
Divide the dough into 6 equal portions and shape into rolls.
Place the rolls on a baking sheet lined with parchment paper and brush with water. Sprinkle the sesame seeds generously on top.
Bake the rolls at 200°C (top/bottom heat) for about 20-25 minutes until golden brown and crispy.
Remove from the oven, let cool slightly, and enjoy!
Tip: For extra fluffy rolls, you can knead the dough again after the first rise and let it rise again before shaping the rolls.
