Crispy bread parcels with potatoes and mozzarella

8 slices of white bread (remove crusts if desired)
Mozzarella cheese, if desired (about 1/2 cup, diced or grated)
1 egg, beaten
200 grams breadcrumbs

Vegetable oil (for frying)
Instructions
Step 1: Prepare the Potato Mix
Boil the potatoes: Peel and dice the potatoes, then boil in water with a pinch of salt until tender, about 15-20 minutes.
Mash and Season: Once the potatoes are cooked, drain and mash until smooth. For a spicy touch, add ground pepper and adjust to taste. Set aside to cool.
Step 2: Prepare the Bread Slices
Flatten the Bread: Take each slice of bread and gently flatten it with a rolling pin. This makes the bread parcels easier to shape and seal.
Place the Filling on the Bread: Spoon a small amount of the potato mixture into the center of each slice. Place a small piece or pinch of mozzarella cheese on top of the potato mixture.
Step 3: Form the Bread Parcels
Fold and Seal: Gently fold each slice of bread over the filling to form a triangle or rectangle. Press the edges together firmly to seal. If necessary, add a little water to the edges to help the bread stick together and keep the filling inside.
Prepare the Coating: Place the beaten egg in one bowl and the breadcrumbs in another.
Step 4: Coat the Bread Parcels
Dip in Egg: Take each filled parcel and dip it in the beaten egg. Make sure it is evenly coated.
Coat with breadcrumbs: Roll the egg-coated parcels in the breadcrumbs to evenly coat all sides. This coating will provide a crispy texture when fried.
Step 5: Fry the parcels
Heat oil: Heat enough vegetable oil in a frying pan to cover half of each parcel for frying. Heat the oil over medium heat.
Fry until golden brown: Carefully place the parcels in the hot oil. Fry each side for 2–3 minutes, or until golden brown and crispy, turning once to ensure even cooking.
Drain excess oil: Remove the parcels from the pan and place them on a paper towel-lined plate to drain excess oil.
Step 6: Serve
Serve hot: These parcels are best served hot while the cheese is still sticky. They pair well with ketchup, marinara sauce, or your favorite dipping sauce.
