These pizza chips are a simple recipe with just 2 ingredients. They're delicious and fun, and you don't have to be on a keto diet to enjoy them!
INGREDIENTS:
2/3 cup (80 g) shredded low-moisture mozzarella
48 slices (21 g) mini pepperoni
DIRECTIONS:
– Preheat oven to 350°F. Grease the inside of a mini muffin tin. This recipe makes 16 chips, so you only need to grease 16 cups.
– Spoon 2 teaspoons of mozzarella into each greased pan. Lightly press the mozzarella into the cups. Place 3 slices of mini pepperoni on each chip. Sprinkle some Italian seasoning on each chip, if desired. This is optional, but adds more flavor.
- Bake the chips for about 8 minutes, or until the edges are dark golden brown. Let the chips cool in the muffin tin until cool enough to handle. Remove the chips from the tin. I like to place the chips on a plate lined with a paper towel to absorb some of the excess oil from the cheese and pepperoni. - Serve the pepperoni chips while they're still warm. They can be eaten on their own or with marinara sauce.
