Preheat the oven: Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius).
Cook the waffle fries: Arrange the frozen waffle fries in a single layer on a parchment-lined baking sheet. Bake for 20-25 minutes, or until golden brown and crispy.
Cook the ground beef and onion: While the fries are baking, cook the ground beef and chopped onion in a skillet over medium-high heat. Cook until the ground beef is browned and the onions are softened. Drain any excess grease.
Add taco seasoning: Reduce the heat to low and stir in the taco seasoning packet. Cook for a few more minutes, stirring to combine the flavors.
Assemble the fries: Once the fries are crispy, remove them from the oven. Top the fries evenly with the seasoned ground beef mixture.
Add cheese and bake: Sprinkle the shredded cheddar jack cheese over the beef. Return the baking sheet to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
Add toppings and serve: Remove the loaded fries from the oven. Top with chopped green onions and diced tomatoes. Serve immediately and enjoy!
