Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
In a large bowl, combine the flour, sugar, baking soda, and salt.
In a saucepan, melt the butter over medium heat. Stir in the cocoa powder and Coca Cola, and bring the mixture to a boil.
Pour the hot cocoa mixture over the dry ingredients and mix until well combined.
In a separate bowl, whisk together the buttermilk, eggs, and vanilla extract.
Add the buttermilk mixture to the batter and mix until smooth.
Fold in the mini marshmallows and chopped almonds.
Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the frosting. In a saucepan, melt the butter over medium heat. Stir in the cocoa powder and Coca Cola, and bring to a boil.
Remove from heat and whisk in the confectioners' sugar and vanilla extract until smooth.
Stir in the chopped almonds.
Pour the frosting over the hot cake as soon as it comes out of the oven.
Let the cake cool before serving.
Variations & Tips
For a richer flavor, try using dark cocoa powder instead of regular. You can also substitute pecans or walnuts for the almonds if you prefer. If you're looking for a bit of spice, add a teaspoon of cinnamon to the dry ingredients. For a more festive touch, sprinkle some shredded coconut over the frosting before it sets.
