Marinated Pork Leg Recipe – Juicy and Full of Flavor!

👨‍🍳 Preparation

1️⃣ Marinade Prepare:

Mix all marinade ingredients in a bowl: olive oil, soy sauce, honey, apple cider vinegar, garlic, mustard, paprika, rosemary, salt, pepper, and chili flakes.
Place the pork leg in a large freezer bag or shallow baking dish and pour the marinade evenly over the meat.
Seal the bag or dish and marinate in the refrigerator for at least 4 hours, but preferably overnight, so the meat can properly absorb the flavors.
2️⃣ Roast the pork leg:

Preheat the oven to 180°C (160°C fan-assisted oven).
Remove the marinated pork legs from the marinade and let any excess liquid drain off.
In a large pan with a little olive oil, sear the pork leg on all sides until it develops a golden brown crust (about 3–4 minutes per side).
3️⃣ Roast the pork leg:

Place the seared pork leg in a roasting pan or casserole dish and scatter the onion and carrots around it.
For added flavor, you can also add a sprig of rosemary to the roasting pan.
Roast the pork leg in the preheated oven for about 1.5 to 2 hours, depending on the size of the leg. Baste it frequently with the marinade or a little broth during roasting to keep the meat moist.
4️⃣ Check the meat and let it rest:

Use a meat thermometer to check that the meat has reached the desired temperature (approx. 75°C for thoroughly cooked but juicy meat).A marinated pork leg is the ideal main course for a festive dinner or BBQ. For the marinade:

4 tbsp olive oil
3 tbsp soy sauce
2 tbsp honey or brown sugar
2 tbsp apple cider vinegar or balsamic vinegar
4 garlic cloves (minced or crushed)
2 tsp Dijon mustard
1 tsp smoked paprika (for extra flavor)
1 tsp dried rosemary or thyme
1 tsp salt
1/2 tsp freshly ground pepper
1/2 tsp chili flakes (optional, for a little extra spice)
For the pork leg:

1.5-2 kg pork leg (preferably with the bone, but also works on its own)
1 onion (quartered)
2 carrots (chopped)
1 sprig of fresh rosemary (optional)
