Homemade Puff Pastry Palmiers

Begin rolling both long sides of the puff pastry sheet inwards, towards the center.
Roll each side tightly and evenly, until the two rolls meet in the middle.
Press the two rolls together gently to seal.
You should now have a double roll.
Chill the Dough:
Wrap the rolled-up dough in plastic wrap and chill it in the refrigerator or freezer for at least 30 minutes. This will make it easier to slice.
Slice and Prepare for Baking:
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Remove the chilled dough from the refrigerator and slice it into ½-inch thick slices.
Place the slices onto the prepared baking sheet, leaving some space between them, as they will spread.
If necessary, reshape the palmiers after placing them on the baking sheet.
Bake:
Bake for 10-15 minutes, or until golden brown.
Flip the palmiers halfway through baking to ensure even browning and caramelization.
Watch them closely, as they can burn easily.
Cool and Serve:
Remove the palmiers from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
