Spicy Cheesy Chicken Sliders with Herb Butter 🥪

4 tbsp unsalted butter, softened
1 tbsp finely chopped parsley
1/2 tsp garlic powder
1/4 tsp salt
Instructions:
To make herb butter:
In a small bowl, mix together the softened butter, chopped parsley, garlic powder and salt until well combined.
Set aside for later use.
To make chicken stuffing:
Heat oil in a large skillet over medium heat.
Add minced garlic and sauté until fragrant.
Add chopped onion and bell pepper and cook until soft.
Stir in shredded chicken, salt, black pepper and paprika. Cook for a few minutes until well combined.
Add soy sauce and mayonnaise and stir until evenly coated. Remove from heat.
Assemble sliders:
Preheat oven to 350°F (175°C).
Cut buns in half horizontally, leaving top and bottom intact.
Spread a layer of tomato ketchup on the bottom half of each bun.
Spread chicken mixture evenly over ketchup.
Sprinkle grated mozzarella over chicken and top with a slice of cheddar cheese.
Bake sliders:
Place top half of buns over cheese.
Generously spread top of buns with prepared herb butter.

2-3 tbsp mayonnaise
12 dinner rolls
Tomato ketchup
Grated mozzarella
Cheddar cheese slices
