Ingredients
- 1 cup finely chopped fresh broccoli florets
- 8 large eggs
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced red bell pepper (optional for more color)
- Salt and pepper to taste
- Nonstick cooking spray or muffin liners
Instructions
1. Preheat your oven: Set your oven to 350°F (175°C). Prepare a 12-well muffin tin by lightly spraying it with nonstick cooking spray or line it with muffin liners for easy cleanup.
2. Steam the broccoli: Steam the chopped broccoli until tender but still slightly firm, about 3 to 4 minutes. Let cool slightly.
3. Beat eggs and cream: In a mixing bowl, beat eggs, cream, salt and pepper until well combined.
4. Combine ingredients: Stir in the shredded cheddar cheese and diced red pepper, if desired. Mix in the steamed broccoli.
5. Fill muffin tin: Pour egg mixture evenly into the prepared muffin tin, filling each tin about 2/3 full.
6. Bake: Place in the preheated oven and bake for 15 to 20 minutes, or until egg bites are set and lightly golden brown on top.
7. Cool and serve: Let egg bites cool for a few minutes before removing from the muffin tin. Serve warm.
