Preparing the dough: Put the flour in a bowl and add lukewarm water with the dissolved yeast. Mix quickly to form a dough, cover with cling film and let it rest for an hour.
Check: After an hour, the dough should have doubled in volume and bubbles should form on the surface.
Dough: Add the remaining flour and sugar to the pre-dough and then add the beaten eggs and milk.
Preparation: Knead the mixture into a smooth dough using a planetary mixer. Gradually add the soft butter and when it has all been absorbed, add the salt.
Let it rise: Form the dough into a smooth ball and leave it covered until it has tripled in volume. This takes about 2-3 hours.
Shaping: Place the dough on the work surface, divide it into 100-110 g pieces and roll each piece into pirli to make smooth balls.
Decoration: Dip the balls in sesame seeds and place on a baking sheet lined with baking paper. Let them rise for another hour. Preparation: Brush with beaten egg white and bake at 190°C for 15-18 minutes. Let cool before serving.
Notes
