Variations & Tips
For a milder version, use Monterey Jack cheese instead of sharp cheddar. If you have picky eaters, you can omit the pimientos or substitute them with roasted red peppers for a different flavor. For a heartier sandwich, add slices of cooked bacon or turkey. To make it vegetarian, ensure the cheese and mayonnaise are vegetarian-friendly. You can also experiment with different types of bread, such as sourdough or whole grain, to suit your family's preferences. This Grilled Pimiento Cheese and Avocado Sandwich is a delightful twist on a classic comfort food that many of us grew up with.
