Grandma's classic cabbage rolls with bacon sauce

Prepare the cabbage: Remove the stalk of the cabbage and blanch the cabbage in a large pan with hot water until the outer leaves come off easily. Carefully remove the leaves you need. Flatten thick leaf ribs a little or cut them out.
Filling: Mix the minced meat with the onion, egg, breadcrumbs, mustard, salt, pepper and paprika. Form small portions from the mixture and roll them up in the cabbage leaves. Secure the roulades with kitchen string or toothpicks.
Frying: Heat the oil in a large pan or roasting pan and fry the cabbage rolls on all sides until they turn brown.
Sauce: Add bacon cubes and fry briefly. Stir in tomato paste, dust with flour and deglaze with beef stock. Stir well and put the roulades back in the sauce.
Braising: Let the roulades simmer over medium heat with the lid closed for around 45-60 minutes. Turn occasionally.
Serving: Serve the cabbage rolls with potatoes or mashed potatoes and the strong sauce.
