Farmer’s Pie with Brussels Sprouts
Ingredients:
For the filling:
1 lb ground meat (beef, lamb, or a mix of both)
1 medium onion, chopped
2 cloves garlic, minced
2 medium carrots, diced
1 cup Brussels sprouts, trimmed and sliced thinly
1 cup peas (fresh or frozen)
1 tablespoon tomato paste
1 cup beef or vegetable broth
1/2 cup red wine (optional)
2 tablespoons Worcestershire sauce
Salt and pepper to taste
1 tablespoon olive oil
For the mashed potatoes:
4 large potatoes, peeled and chopped
1/4 cup butter
1/2 cup milk (or more for desired consistency)
Salt and pepper to taste
A pinch of nutmeg (optional)
