Danish Apple Cottage Cheese Pastries – A High Protein Breakfast Cake

1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the Cottage Cheese Filling:
In a small bowl, mix the cottage cheese, honey (if using), vanilla extract, and lemon zest until combined. Set aside.
3. Prepare the Puff Pastry:
On a lightly floured surface, roll out the puff pastry sheet slightly and cut it into 6 equal rectangles or squares.
Place the puff pastry pieces on the prepared baking sheet.
4. Assemble the Pastries:
Spoon 1-2 tablespoons of the cottage cheese mixture into the center of each pastry.
Arrange thin slices of apple on top of the cottage cheese mixture.
Sprinkle with a pinch of cinnamon and brown sugar for extra sweetness.
5. Apply the Egg Wash:
Brush the edges of the puff pastry with the beaten egg wash to give a golden finish when baked.
