1 tablespoon lemon juice
2 cloves garlic, minced
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional)
Directions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the Parmesan cheese, breadcrumbs, olive oil, lemon juice, minced garlic, salt, and pepper.
Place the halved artichoke hearts in a baking dish, cut side up.
Spoon the breadcrumb mixture evenly over the artichoke hearts, pressing gently to adhere.
Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and crispy.
Remove from the oven and sprinkle with fresh parsley, if using, before serving.
Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes to the breadcrumb mixture. You can also experiment with different cheeses, such as Asiago or Pecorino Romano, for a unique flavor. If you prefer a gluten-free option, substitute the breadcrumbs with crushed gluten-free crackers or almond flour.
