1. Make the base:
Crush biscuits finely using a food processor or by hand.
Mix with melted butter until it resembles wet sand.
Press into the base of a 9-inch (23 cm) springform pan or individual dessert glasses.
Chill in the fridge while preparing the cream.
2. Prepare the cream layer:
In a bowl, beat cream cheese with powdered sugar and vanilla until smooth.
In a separate bowl, whip the cream until soft peaks form.
Fold whipped cream into the cream cheese mixture until fully combined and fluffy.
Spoon or pipe over the chilled base and smooth the top.
3. Add the cherries:
Layer the drained morello cherries evenly over the cream.
4. Make the chocolate drizzle:
Melt chopped dark chocolate with 2 tbsp of reserved cherry syrup (use a double boiler or microwave in 20-second intervals).
Drizzle over the cherries. Chill for at least 2–3 hours (or overnight) until set.
5. Serve:
Garnish with grated chocolate or curls before serving, if desired.
