This recipe was given to me by my grandmother from Ireland, and I can guarantee that I cook it consistently throughout the year!

In a large bowl, mix together the flour, salt, and baking powder.
Add the warm water and olive oil, and stir until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Divide the dough into 4 equal pieces and roll each piece into a circle about 1/4 inch thick.
In a separate bowl, combine the ricotta, mozzarella, Parmesan, oregano, and basil.
Spoon a generous amount of the cheese mixture onto one half of each dough circle.
Fold the dough over the filling and press the edges to seal, using a fork to crimp the edges.
Heat oil in a deep pan over medium heat until it reaches 350°F (175°C).
Carefully fry each calzone for about 3-4 minutes on each side, or until golden brown and crispy.
Remove from oil and drain on paper towels. Serve hot with marinara sauce for dipping.
Variations & Tips
For a meatier version, add some cooked and crumbled Italian sausage or pepperoni slices to the cheese filling. If you have picky eaters, you can customize each calzone with different fillings, such as sautéed mushrooms, spinach, or even a bit of cooked chicken. For a lighter option, try baking the calzones in a preheated oven at 400°F (200°C) for 15-20 minutes instead of frying. You can also experiment with different cheeses like cheddar or provolone for a unique flavor twist.
