1οΈβ£ Prepare the ingredients
π Bring a pot of salted water to a boil.
π Mince the garlic and trim the hard stems of the asparagus. π Remove the small leaves from the stems and cut the asparagus into three pieces.
2οΈβ£ Cooking the Pasta & Asparagus
π Cook the linguine for 12-14 minutes in boiling water.
π Add the asparagus to the pan 4 to 6 minutes before the end of cooking time.
π Reserve Β½ ladle of the cooking water, then drain.
3οΈβ£ Preparing the Sauce
π Heat a dry sautΓ© pan and fry the bacon for 6-7 minutes.
π Add the garlic and deglaze with the balsamic vinegar. Stir for 1 minute.
π Add the linguine, asparagus, ricotta, and half of the grated GruyΓ¨re cheese.
π Pour in the reserved cooking water and mix well. Heat for 1-2 minutes.
4οΈβ£ Plating & Serving
π Arrange the arugula in soup plates.
π Add the ricotta and asparagus linguine on top.
π Drizzle with olive oil and sprinkle with the remaining grated cheese.
