3–4 lbs beef chuck roast (boneless), cut into large chunks
3 chipotle peppers in adobo sauce (adjust to taste)
1 white onion, quartered
4 cloves garlic

Juice of 2 limes
2 tsp ground cumin
1 tbsp dried oregano
1/2 tsp ground cloves (optional but authentic)
1 1/2 tsp salt
1 tsp black pepper
1 cup beef broth (or water)
2 bay leaves
