Slow-cooked, tender beef with smoky spices – a classic Mexican favorite.

📝 Ingredients:
For the Barbacoa:
3–4 lbs beef chuck roast (boneless), cut into large chunks

3 chipotle peppers in adobo sauce (adjust to taste)

1 white onion, quartered

4 cloves garlic

1/4 cup apple cider vinegar

Juice of 2 limes

2 tsp ground cumin

1 tbsp dried oregano

1/2 tsp ground cloves (optional but authentic)

1 1/2 tsp salt

1 tsp black pepper

1 cup beef broth (or water)

2 bay leaves

For Serving:
Small corn or flour tortillas

Chopped white onion

Fresh cilantro

Lime wedges

Crumbled queso fresco or cotija (optional)

Sliced radishes or pickled onions (optional)
