Preparation: Mix the diced tomatoes with the chopped basil. Taste, add salt and pepper. Pile on the toasted bread, drizzle with a thin layer of balsamic vinegar cream.
Tip: If you have mini mozzarella balls (bocconcini) at home, you can also use them to boost it!
Cream Cheese-Fruit/Pear Crostini 🧀🍐
Ingredients: Cream cheese (natural or goat cheese, ricotta also works), fresh figs cut into thin slices (or thin pear slices), drizzle with honey.
Preparation: Spread the toasted bread generously with cream cheese. Place 1-2 thin slices of fig or pear on top. Drizzle with a little honey.
Tip: You can also sprinkle chopped walnuts on top for texture.
Tuna Cream Crostini with Lemon and Capers 🐟🍋
Ingredients: 1 can of tuna in oil (drained well), 1-2 tablespoons mayonnaise (or sour cream/natural yogurt), juice of half a lemon, 1 tablespoon capers (chopped), salt, pepper.
Preparation: In a small bowl, break up the drained tuna with a fork. Mix in the mayonnaise/sour cream, lemon juice and chopped capers. Season with salt and pepper to taste. Pile the cream on the crostini.
Tip: You can also sprinkle with fresh chives or parsley
