No-Bake Salted Caramel Cookies

Remove from heat and stir in peanut butter, vanilla, and ¼ tsp sea salt until smooth.

Add the oats

Mix in the oats until well combined. If using caramel chips or melted caramels, stir them in now for extra richness.

Form the cookies

Drop spoonfuls of the mixture onto the prepared baking sheet.

Use the back of a spoon to gently flatten if desired.

Sprinkle with sea salt

While still warm, sprinkle a tiny pinch of flaky sea salt on top of each cookie.

Let set

Allow cookies to cool and set for at least 30 minutes at room temp, or speed it up in the fridge.

For a crunchy twist, stir in chopped pretzels or nuts.

Make them gluten-free by using certified gluten-free oats.
