Combine all ingredients except the butter and water in a bowl and mix well.
Gradually add the warm water and knead for 10 minutes, until a soft dough forms.
Add the butter and mix well into the dough, then let it rise in a warm place. Prepare the filling by combining the softened and grated cheese, thyme, and parsley.
Mix well.
Cut the dough into pieces of the desired size, open each piece, and place the filling inside.
Roll and flatten the piece and, using a sharp knife, make a hole in the shape of the image.
Place the bread on a baking sheet lined with parchment paper and let it rise until doubled in size.
Brush the top of the bread with egg yolk and a little vinegar, sprinkle with sesame seeds, and bake in the preheated oven until cooked through.
