Pesto Prosciutto Chicken

This recipe seems like A LOT, but it was quite easy, especially if you serve it with some simple sides - some rice and a salad. It is impressive as heck - a great dish for a dinner party. And trust me even if you don’t think you like tomatoes, you will like them this way!

First things first. Toss the following into a big pot:
- 2 cups baby tomatoes
- 1/4 cup olive oil
- 5 garlic cloves, minced
- Red onions, sliced into thin moons
- Salt and pepper
.
Cook over medium high heat for 10-15 minutes, or until tomatoes are burst. When they are burst add in:
- another cup of halved baby tomatoes
- A drizzle of honey
- A big splash of balsamic vinegar
.
Set the tomatoes aside and get on with your chicken.
