The key to the lightness is the amount of water extracted from the zucchini and the minimal use of flour. Here is a recipe that will guarantee you soft and tasty zucchini gnocchi:

Soft and Light Zucchini Gnocchi 💚
This recipe makes about 4 servings.

Ingredients:

500 g zucchini (about 2 medium-sized ones)
200-250 g plain flour (you may need more or less, depending on the moisture content of the zucchini)
1 large egg yolk
50 g grated Parmesan cheese (or Grana Padano)
1/2 teaspoon salt
A pinch of nutmeg (freshly grated is best)
To serve (ideas):

Melted butter and fresh sage (classic and unfailing)
