*Preparation:

Finger-cut small sausages into slices and place them in a single layer in a large, heavy saucepan. Cook the sausage over medium heat until the pink color disappears. Reduce the heat to medium-low. Sprinkle with half the flour and stir until the sausage is incorporated, then gradually add more flour. Stir and cook for about one minute, then add the milk, stirring constantly. Boil the broth, stirring frequently, until thickened (this may take 10 to 12 minutes). Sprinkle with salt and pepper and continue cooking until thickened and aromatic. If it thickens too quickly, simply drizzle with another half cup of milk, or more if needed. Taste and adjust seasoning.

Pour the sausage gravy over the hot crackers and serve immediately. This recipe can easily be doubled to serve 24 people.
