Honey Mustard Potatoes

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together olive oil, whole grain mustard, Dijon mustard, honey, minced garlic, thyme, salt, and pepper.

Add the halved potatoes to the bowl and toss until they are evenly coated with the honey mustard mixture.

Spread the potatoes out in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden and crispy on the edges.

Garnish with freshly chopped parsley before serving. Enjoy as a flavorful side dish with chicken, fish, or your favorite protein.
