Directions
Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
In a shallow dish, combine the flour with a pinch of salt and pepper.
In another dish, beat the eggs until smooth.
In a third dish, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper.
Dip each chicken fillet into the flour, shaking off any excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to ensure an even coating.
Place the breaded fillets on the prepared baking tray and drizzle with olive oil.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
Remove from the oven and let rest for a few minutes before serving.
Variations & Tips
For a spicier version, add a teaspoon of cayenne pepper to the breadcrumb mixture. You can also experiment with different herbs like thyme or rosemary for added flavor. If you prefer a gluten-free option, substitute the all-purpose flour and breadcrumbs with gluten-free alternatives. For an extra crunch, try using panko breadcrumbs instead of regular ones.
