Peel the potatoes and cut them into cubes or slices (depending on your preference).
If using an onion and garlic, dice the onion and finely chop the garlic.
Wash the green beans and, if fresh, trim the ends.
Prepare the crockpot:
Place the potatoes, green beans, and onion (if using) in the crockpot.
Place the ham on top. If using a ham roast, you can chop it into large pieces if it's too large.
Add the garlic, if using.
Season:
Sprinkle the salt, pepper, herbs, and paprika (optional) over the ingredients in the crockpot.
Pour the broth (chicken or vegetable broth) over the mixture and add the butter or olive oil for flavor.
Cook:
Cover the crockpot and set it on "Low" for 6-8 hours or "High" for about 4-5 hours.
Check occasionally to see if the potatoes are tender and the ham is cooked thoroughly. If you're using a whole ham roast, you can slice it thinly or pull it apart after the cooking time.
Serving:
Once everything is thoroughly cooked, you can serve the dish. The potatoes should be soft and the green beans tender. The ham will be nice and moist and flavorful.
Tips:
You can also add other vegetables, such as carrots or corn, to add even more color.
If you want more flavor, you can also add a teaspoon of mustard or a pinch of sugar to refine the dish.
