Hachen-Tajine

Heat the olive oil in a tajine or large saucepan over medium heat.
Add the chicken legs and fry for about 5 minutes on each side until golden.
Remove the chicken from the saucepan and set aside.
Add the chopped onion and the sliced garlic to the sauserole and cook until tender, about 5 minutes.
Add ginger, cumin, paprika, cinnamon, turmeric, salt and black pepper to the saucepan and mix.
Put the chicken back in the saucepan and brush it with the spice mixture.
Add the olives, the pickled lemon, the parsley and the coriander to the saucepan.
Pour the chicken broth and stir.
Cover the saucepan and simmer over a low heat for about 45 minutes until the chicken is cooked and tender.
Add the raisins to the saucepan and simmer for another 5 minutes.

Serve the warm tajine with couscous or bread.
