Ingredients (makes 6 waffles):
For the cones:
6 tortillas (corn or wheat)
1 tablespoon olive oil (for brushing)
For the chicken salad:
2 chicken fillets (cooked and diced)
1/2 avocado, diced
1 tomato, diced
1/4 cucumber, diced into small cubes
1/4 red onion, finely chopped
2 tablespoons mayonnaise
2 tablespoons Greek yogurt (or more mayonnaise)
1 tablespoon mustard (optional)
Salt and pepper to taste
Fresh parsley or chives (for garnish)
Preparation:
Step 1: Make the cones
Preheat oven:
Preheat the oven to 180°C.
Cut the tortillas:
Cut the tortillas to the desired size. If you want smaller cones, you can quarter the tortillas.
Form the cones:
Roll the tortillas into a cone shape. Use a little oil or a toothpick to secure them.
Bake the cones:
Brush the outside of the waffles with olive oil and bake them in the oven for about 10 minutes, until golden brown and crispy. You can also bake them in an air fryer, which is faster.
Let cool:
Remove the waffles from the oven and let them cool slightly.
