Ingredients: 2 large eggplants 500 g tomatoes (fresh or canned) 2 cloves garlic 1 red onion Olive oil Fresh basil Salt, pepper Grated parmesan cheese (optional) Preparation: Prepare the eggplant: Wash the eggplant and cut into approx. Cut into 1 cm thick slices.
We remove the bitter juice by salting: Place the slices in a bowl, salt them and cook for approx. Let it rest for 30 minutes. Then, blot the moisture with a paper towel.
To prepare the sauce: Finely chop the onion and garlic and fry them in olive oil.
Add the tomatoes (if using fresh tomatoes, peel and dice them first) and cook for approx. Cook for 20 minutes until thickened.
Season with salt, pepper and chopped basil.
