Camembert in a Puff Pastry Crust with Bacon and Potatoes 🧀🥔✨

1. Preheat your oven to 200°C (gas mark 6-7).
2. Peel and dice the potatoes. Cook them in a saucepan of boiling salted water for about 10 minutes, until tender. Drain and set aside.
3. In a skillet, fry the bacon bits over medium heat until crispy. Place them on paper towels to remove excess fat.
4. On a floured work surface, roll out the puff pastry. Place the Camembert in the center. 5. Arrange the diced potatoes and crispy bacon over the cheese. Add a pinch of herbes de Provence, salt, and pepper to enhance the flavors.
6. Fold the pastry around the cheese, making sure to seal the edges well to prevent the cheese from escaping during baking. Brush the crust with the beaten egg to give it a nice golden color.
7. Place the Camembert en croute on a baking sheet lined with parchment paper and bake for about 20 minutes, until the pastry is golden brown and crispy.
8. Let rest for a few minutes before slicing. Serve warm, ideally with a green salad.
