Pound the chicken breasts to an even thickness of about 1/2 inch.
Season the chicken with salt and pepper.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese.
Dredge each chicken breast in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts until golden brown and crispy on both sides, about 3-4 minutes per side. Transfer to a baking dish.
Preheat your oven to 375°F (190°C).
Top each chicken breast with marinara sauce and sprinkle with mozzarella cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
Variations & Tips
For a lighter version, you can bake the breaded chicken breasts instead of frying them. Simply place them on a baking sheet and bake at 400°F (200°C) for 20-25 minutes before adding the sauce and cheese. For a spicier kick, add a pinch of red pepper flakes to the marinara sauce. You can also experiment with different cheeses, such as provolone or fontina, for a unique twist on the classic.
