Prepare the bruschetta topping: Mix the diced cherry tomatoes, chopped basil, 1 tablespoon olive oil, balsamic vinegar, and a pinch of salt and pepper in a bowl. Let the mixture sit for a few minutes to allow the flavors to fully develop.

Form the patties: In a second bowl, combine the ground beef with salt, pepper, garlic powder, and oregano. Divide the mixture into two equal portions and form patties.

Fry or grill: Heat a pan with olive oil or preheat your grill. Fry the patties for 3 to 4 minutes per side, until cooked through. Just before the patties are done, place a slice of mozzarella on each patty and let it melt.

Assemble the burgers: Top the bottom of the burger buns with a small handful of fresh arugula. Then, add the hot patty with the melted mozzarella. Then, generously top with the bruschetta and tomato mixture.

Enjoy: Place the top of the bun on top and enjoy your homemade bruschetta burger – best served fresh and warm. Enjoy!
