Prepare the Potatoes:
Parboil potatoes in salted water for 7β10 minutes until just tender but not mushy. Drain and pat dry.
OR microwave for 5β6 minutes if youβre short on time.
Crisp the Potatoes:
Heat oil or butter in a large skillet over medium-high heat.
Add potatoes and cook, undisturbed, for 4β5 minutes until bottoms are golden and crispy.
Stir and continue cooking until crispy all over. Season with salt, pepper, and garlic powder.
Cook the Sausage:
Push potatoes to the side of the skillet or remove temporarily.
Add sliced sausage and cook until browned, about 5β6 minutes.
Add diced onions and bell peppers, cooking until soft and lightly caramelized.
Combine and Melt the Cheese:
Mix everything together in the skillet.
Sprinkle cheese over the top, cover with a lid, and let it melt (2β3 minutes).
Garnish with green onions or parsley if desired.
Serve Hot!
Great on its own or topped with sour cream, hot sauce, or a fried egg.
