Crispy Potatoes, Smoked Sausage, and Melting Cheese

Prepare the Potatoes:

Parboil potatoes in salted water for 7–10 minutes until just tender but not mushy. Drain and pat dry.

OR microwave for 5–6 minutes if you’re short on time.

Crisp the Potatoes:

Heat oil or butter in a large skillet over medium-high heat.

Add potatoes and cook, undisturbed, for 4–5 minutes until bottoms are golden and crispy.

Stir and continue cooking until crispy all over. Season with salt, pepper, and garlic powder.

Cook the Sausage:

Push potatoes to the side of the skillet or remove temporarily.

Add sliced sausage and cook until browned, about 5–6 minutes.

Add diced onions and bell peppers, cooking until soft and lightly caramelized.

Combine and Melt the Cheese:

Mix everything together in the skillet.

Sprinkle cheese over the top, cover with a lid, and let it melt (2–3 minutes).

Garnish with green onions or parsley if desired.

Serve Hot!

Great on its own or topped with sour cream, hot sauce, or a fried egg.
