Cut 2 limes in half and squeeze their juice. Set aside.
The other 2 limes will serve as "cups": cut them in half as well, then gently scoop them out with a spoon without damaging the rind. Keep the shells in the freezer so they're perfectly cold when serving ❄️.

🍯 Make the syrup:
In a saucepan, combine the water and sugar. Heat over low heat until the sugar dissolves completely. Remove from heat and let cool.

🌱 Infuse the mint:
Add the mint leaves to the warm syrup and let it steep for 10 minutes. Then, strain to remove the leaves.

🍹 Blend:
Add the strained lime juice to the flavored syrup. Stir well.

❄️ Churn or freeze:
If you have an ice cream maker, pour the mixture into the blender and let it churn until you get a smooth sorbet. Alternatively, pour the mixture into a shallow dish, place in the freezer and scrape every 30 minutes with a fork for 4 hours to create a sorbet-like texture.
